Eating grain free has dramatically changed my life for the better. Although an occasional gluten free grainy treat is totally in my diet when it is #worthit, most of the time, I stay clear of rice and corn and their flours.
Sometimes I do find myself craving a favorite dish from my childhood or something with a different texture. Usually, I have been able to replace it with a paleo recipe, so when I was craving Baked Mac & Cheese, I found a way to make it practically paleo (it totally had real cheese because I’d choose cheese over soy fake cheese any day). But, to make this childhood fav, I needed breadcrumbs. The gluten free breadcrumbs at the store were loaded with rice flour and sugar (WHY SUGAR??). So, I opted to make my own. After scouring the internet for a while, I put together many ideas and came up with this quick and simple recipe. My favorite part, it is a recipe for SO many things in one AND its perfect for 1-2 people! No leftovers mean no reaching for it just because. YAY! This is for me!
