It’s been a wild couple months or really several months. My goal for a simple and balanced life has been knocked off course and I lost my focus. Life is hard. Life is real. But life is also forgiving and everyday is a new day. Thank you all for hanging in as I swayed all over the place. I’m not sure I have to right words to share with you how excited I am about this cookie!! Made with just three simple ingredients, this summer delight is easily my new favorite! RECIPE: zest 1 🍋, lime or orange (I did lime), juice the same fruit. Starting with roughly a TBSP zest, 2 TBSP of juice mix it with 1/4 cup REAL maple syrup and 1 cup almond flour. Put dough in plastic wrap or beeswax wrap (zerowaste) and freeze for 10 minutes. Preheat oven to 350°F. Roll dough into about TBSP size balls. They don’t spread much so they can be kind of close. You should get about 12 cookies. Using a fork dipped in water, press it gently into the cookie in two different directions, making the pattern seen in picture. Bake of 9-12 minutes. Watch them, don’t let cookie get brown. Then, this is a must. LET THEM COOL COMPLETELY. I left mine right on the pan. Then enjoy! I feel like I have been posting so much more about food since moving to Asheville. I also feel like my low/zero waste conversations have quieted down. I’m happy to report, I have learned a new way to love southern heat.
