Real Food, Adventure and Minimalism

How some books find their way into our lives can be funny. This one, I’ll never forget. While driving to the grocery store one day, a woman quickly pulled into the spot beside me and waved ecstatically as if something was terrifyingly wrong or we were long lost friends being reunited. This sweet woman had waved me down because of my bear bumper sticker. 🐻 My sticker had excited her so much, she needed to talk to me about her love for them! Now in Asheville, black bears are seen frequently very close to homes. We are after all living in their 🏔 mountains. After a lengthy conversation about my time in Maine and love for both wildlife and the wilderness, she recommended this book. Skeptical at first, I wasn’t sure where she was going with it when I heard the title. But, let me tell you, if you are into wildlife, wilderness and are even a little eco conscious, you’ll want to borrow this book from your library! Within these pages, I was reminded of so much that brings me joy. I was reminded why I live a low waste, plastic free lifestyle. I was reminded why I make the daily tiny choices I make. I do it for 🐆🌳🐬🌻🐢🌵🦌🏔 all of them! I am grateful for each one of you who think twice before using single use plastic, refuse straws, buy in bulk, remember your reusable cups and bottles, use shampoo bars and so much more. I am grateful for @paulrosolie and all the work he has and continues to do. I am grateful for the courageous woman that waved me down to thank me for caring for our wildlife by having a simple sticker. Thank you! #bethechange ...

🥑🍫 Avocado Chocolate Mouse I’ve got a sweet 🦷 like you wouldn’t believe! I love chocolate 🍫 and cookies 🍪 and all things that can be made gluten free! When I moved to a grain free vegan-ish lifestyle, I cut out sugar. Done, over and out of my life! But your gal still needs some treats! This recipe is a FAV!!! Are you ready? 🥑 2 avocados 🍫 1/4 cup cocoa powder 🍁 1/4 cup maple syrup (or 🍯) 🥛 3-4 tbsp plant milk (i use oat) 🧂 1/8 tsp salt (my fav is pink Himalayan) Blend it all together in a food processor and enjoy! It’s that simple! I like putting mine in the fridge for a little to make it taste like pudding. Yummmmm! Feeling like adding something fun? A few weeks ago I was spending $11 a loaf on sprouted #glutenfree #vegan bread. Yup, that’s insane! 😳 But it is what it cost. Then I decided to head to Pinterest and see if there was a way to make this in my own. After some hilarious failed attempts 🧱 , I think I’m just a few alterations away from yummy healthy sprouted bread baked right at home! I haven’t yet calculated the cost but my guess is less than $5 a loaf. Once I’ve got it perfected 🍞 , I’ll be sure to share. As a preview, it contains buckwheat, chia, flax, avocado oil, salt and homemade baking powder. 👩🏻‍🍳 Do you buy expensive bread or make your own? ...

Happy #GivingTuesday!! 💕 Some of you may know, food security is an issue close to my heart and something that has touched many people in my life, including myself. The biggest struggles I faced and watched others struggle with is access to healthy food and nutrition education. This time last year, I discovered @bounty_and_soul Soul! They are a Western North Carolina nonprofit bringing people FRESH PRODUCE!!! 🥒🍅🥕They set up like a farmers market with cooking demos, classes and more while simply asking participants how many are in their household. The dignity. The love. The community and the education! This nonprofit is changing lives in numerous unimaginable ways. I spend time each month volunteering with them and I ask you to join me in supporting their mission by donating this #GivingTuesday. Be it $5 or $50, every dollar gets an apple 🍏, green pepper or perhaps an avocado 🥑 into the mouths of someone in need. 💕Together, let's be the change we wish to see in the world! #Donate via the link in my bio! 👆🏽 ...

Being sustainable means different things to different people. When I look at this moment in my life, I feel gratitude 🙏🏼 and success on my own journey to a 🌏sustainable life. This clothing rack was rehomed years ago when I simply asked if anyone had a wooden drying rack they were not using. The clothes are mostly thrifted or from sustainable companies like @wearpact. The hangers are a mixture of wooden and plastic. The cloth pads from @gladragspads eliminate my period waste entirely and my use of them has sparked many life altering conversations and friendships. The plant coming in from the left was from a cutting and has produced many 🌱 plant babies I have been able to gift. The sun catcher is from my mother in law and catches the morning sky just right, reminding me to find gratitude in every day. And this view is out the back window of my home I am building with my husband. I have begun to learn to be happy with where I am today, where I was yesterday and where I will be tomorrow. I invite you to do the same. It’s a journey, not a race. 🐢 #simplelife ...

There are moments in my day where I look down or around and see the life I want, the life I am building. The plants 🌱 I once couldn’t keep alive, the plate I once didn’t know how to fill, the body I am learning to respect. I hope you look around and see what you are building, whatever stage you are in and find happiness! Thank you to my avocado 🥑 toast, plant babies, the sun shining into my ☀️ home and @vivobarefoot shoes for inspiring me today! #IAmGrateful ...
